Aged for one year, Manchego is made from sheep’s milk in La Mancha. It is semi-firm with a robust nutty flavor, slight piquancy & a creamy / buttery bite
Valdeón- Paired with local Sierra Honey Farm Sage Honey
This creamy blue cheese retains an excellent balance of sweet, spicy & earthy flavors. Made in León from cow & goat’s milk, it is aged 1.5 to 2 months
Queso de Cabra - Paired with herbed almond biscuits
This raw goat cheese, made in Murcia, is dense and has a sweet finish. We hand roll it in Spanish smoked paprika
Spanish Charcuterie – served with house crostini
All made with house-sliced,100% dry-cured (nitrite- free) free-range Ibérico, black-footed pigs grazed on fallen acorns in Andalucia.
