Manchego - Paired with membrillo (quince) preserves Aged for 1 year, Manchego is made from sheep’s milk in La Mancha. It is semi-firm with a robust nutty flavor, slight piquancy & a creamy / buttery bite.
Valdeón- Paired with local Sierra Honey Farm Sage Honey This creamy blue cheese retains an excellent balance of sweet, spicy & earthy flavors. Made in León from cow and goat’s milk & aged 1.5 to 2 months
Mahon 3 month - Paired with Marcona Almonds
Made in Minorca this young Mahon is flavorful and creamy
Queso de Cabra - Paired with herbed almond cookies
This raw goat cheese, made from the milk of Murciana goats in Murcia, is creamy & dense with a sweet finish. We hand roll it in Spanish smoked paprika
Spanish Charcuterie - served with house crostini
All made with house-sliced,100% dry-cured (nitrite- free) free-range Ibérico, black-footed pigs grazed on fallen acorns in Andalucia.
